A water grill uses a shallow bath of water beneath the cooking surface to catch fat and juices as they drip from food. Instead of burning on a hot plate, the drippings fall into the water, reducing smoke and flare-ups while keeping the meat moist. The water also moderates the temperature around the food, preventing the dryness that can come from direct radiant heat.
The operator places the food on the stainless steel grid, which sits above the water bath. Pilot lights show which zones are active. Once the grill reaches the set temperature, the food is loaded and turned as needed until done. The removable grid and water/grease tub lift out for cleaning after service.
The casing and grid are made of stainless steel, chosen for durability and resistance to corrosion in a busy kitchen. The water/grease tub collects both fat and cooking juices, which can be tipped away without scraping a hot surface.
The two thermostats control the temperature of each heating zone separately, giving precise heat management across the 430 by 540 mm grill surface. Pilot lights provide a quick visual check that the zones are powered.
An 8.1 kW power rating means the grill draws a significant load, requiring a dedicated 400 V three-phase circuit typical of professional catering equipment. The 18 kg weight makes the unit light enough to move with two people, while the 540 by 700 by 210 mm footprint fits on most worktops without overhang.
After use, the grid and water/grease tub are removed and washed. The stainless steel casing can be wiped down with a damp cloth, avoiding abrasives that could damage the surface.
