A PT100 temperature probe measures heat by detecting the electrical resistance of a platinum element that changes predictably with temperature. The platinum sensor is housed in a sealed tip, allowing it to sit directly in hot oil, circulating air or chilled water without damage. As the temperature rises or falls, the resistance shifts, and the connected controller translates that shift into a precise reading. This method gives consistent, repeatable results across the full range of kitchen temperatures, from blast chilling to deep frying.

The operator fits the probe into the appliance port, ensuring the tip reaches the centre of the load—whether a joint of meat, a vat of oil or a tray of baked goods. The 2 m lead allows the probe to be routed from the appliance to a remote controller or display without stretching or kinking. Once connected, the probe runs continuously, updating the temperature reading in real time so the operator can track progress, adjust settings or trigger alarms if the temperature drifts outside the set limits.

The probe is constructed with a stainless-steel sheath that protects the platinum element from physical knocks and corrosive kitchen environments. The lead is insulated with a heat-resistant sleeve that remains flexible even at high temperatures, preventing cracks or shorts. The connection end is fitted with a standardised plug compatible with Stalgast controllers and many other professional catering systems.

The 2 m length provides enough reach to position the controller away from heat sources, steam or splashes, reducing the risk of damage to sensitive electronics. The probe's compact tip fits into small appliance ports without obstructing airflow or blocking access to other components.

Cleaning involves wiping the stainless-steel sheath with a damp cloth and mild detergent after each use, ensuring no food residue or grease builds up on the surface. The probe should be disconnected before cleaning to avoid electrical hazards. Regular inspection of the lead for signs of wear or heat damage helps maintain accuracy and safety.

This PT100 probe is listed in the Stalgast catalogue under temperature measurement accessories for professional catering equipment.
