The trolley rolls on four swivel castors, two of which lock to hold the unit in place during service. This mobility allows the same trolley to be loaded in the kitchen, wheeled to the pass, and then taken to the dining room or buffet station without transferring the load. The flat shelves provide a stable surface for plates, gastronorm pans or bulk inserts, and the open construction lets air circulate so that hot food stays hot and cold food stays chilled.

Use begins by unlocking the castors and wheeling the empty trolley to the loading point. Each shelf is loaded in turn, starting with the lowest to keep the centre of gravity low. Once loaded, the trolley is wheeled to the service point and the locking castors are engaged. After service, the shelves are cleared from the top down, and the trolley is returned to the kitchen or storage area.
