Electric proofer for 4, 6 and 10 trays S ovens
A proofer creates the warm, humid environment dough needs to rise and recover its structure before baking. The Tecnoeka MKL 1064 S uses an electric heating element and a sealed cabinet to hold steady temperatures between 25 °C and 65 °C. Air circulates gently, ensuring every tray receives the same conditions without drying the surface or causing uneven expansion. The process is slower than a hot oven but faster than room temperature, giving bakers control over proofing times and final texture.
To use the proofer, load the required number of trays—four, six or ten—onto the sliding racks. Set the desired temperature on the control panel and start the heating cycle. A built-in timer allows unattended operation; once the cycle finishes, the unit maintains the set temperature until the trays are removed. The door seals tightly to keep humidity inside, so the dough remains supple and the crust does not form prematurely.
The cabinet stands on the floor and is constructed entirely from AISI 304 stainless steel, including the exterior panels, interior lining and sliding racks. This material resists corrosion from moisture and cleaning agents, and it does not react with acidic doughs. The protection level IPX4 means the electrical components are shielded against splashes from any direction, which is essential in a busy kitchen where water is used constantly.
The control panel offers temperature adjustment within the 25–65 °C range, allowing the proofer to handle everything from delicate croissants to dense sourdough. A power rating of 2.4 kW indicates the load it places on the electrical circuit; it requires a dedicated 230 V single-phase supply, the standard in professional kitchens. The unit weighs 91 kg, so it is moved with a trolley or two people, and its footprint of 850 mm by 1030 mm fits against a wall or between other floor-standing equipment.
Cleaning involves wiping the stainless-steel surfaces with a damp cloth and mild detergent after each use. The sliding racks can be removed for thorough cleaning, and the door seal should be checked regularly to ensure it remains intact and free of dough residue. The proofer is available in configurations for four, six or ten trays, allowing it to match the volume of production.
The Tecnoeka MKL 1064 S is categorised under proofing equipment for professional bakeries and catering workshops.
