The TECNOEKA Proofer is a specialized professional appliance that controls temperature and humidity during the fermentation process of dough products before baking. A precise proofer ensures reproducible fermentation quality for dough in any weather conditions – for bread, croissants, pastries and other leavened bakery products. TECNOEKA proofers use electric heating and steam supply to maintain the optimal temperature (+25°C to +40°C) and humidity (70–85% relative humidity) required to activate the yeast in the dough and achieve the correct volume increase. Without a controlled fermentation environment, reproducible bakery product quality cannot be ensured. BHS supplies TECNOEKA proofers to bakeries and pastry shops.
The TECNOEKA Proofer complements the extensive TECNOEKA range – see also TECNOEKA Pastry Ovens and Convection and Pastry Ovens.
The TECNOEKA Proofer is a professional appliance used daily in bakeries and pastry shops, providing a controlled fermentation environment for leavened products before they are baked in the oven. BHS supplies TECNOEKA proofers to bakeries and food production facilities.
How the proofer works
The TECNOEKA proofer maintains precise temperature and humidity in a closed chamber where dough products ferment. The electric heater keeps the chamber temperature at the set level, while the steam generator provides the necessary humidity to prevent the dough surface from drying out during fermentation. The fermentation temperature is usually set at +27°C to +35°C, with humidity at 75–85% relative humidity to prevent the dough surface from drying. These parameters correspond to the optimal yeast activity range, ensuring good and predictable dough volume increase over a set time. A proofer with a programming function allows setting the fermentation time and automatically signals when the process is complete.
Retarder function – delayed fermentation
Modern TECNOEKA proofers often combine fermentation and cooling functions (retarder-proofer). The retarder function allows loading the dough into the proofer in the evening, delaying fermentation in a cool environment, and setting an automatic switch to fermentation mode at midnight so that the products are ready for baking at the start of the morning shift. This approach enables bakeries to prepare fresh products in the morning hours without a night shift – a significant improvement in production efficiency and staff working time optimization. Delayed fermentation also enhances the final product’s flavour and texture, as longer, slower fermentation at low temperatures develops a deeper aroma and the yeast enzymes act more delicately.
HACCP requirements for a proofer
Within HACCP, the fermentation process is considered a critical control point, as fermentation temperature affects yeast activity and potential pathogen development. The proofer temperature must be monitored and recorded, ensuring it remains within the safe fermentation range. Cleaning the proofer chamber between fermentation batches prevents cross-contamination, as dough residues and yeast remnants can become a source of bacterial and mould growth in the moist and warm interior environment. The TECNOEKA proofer interior is typically made of stainless steel or coated with neutral materials that facilitate regular hygiene procedures.
HoReCa applications
In bakeries, the TECNOEKA proofer is the main tool for producing bread, croissants, brioche and other yeast-based products – without a controlled fermentation environment, it is impossible to ensure reproducible volume increase and consistently high product quality every day. In hotel bakeries, a proofer with a retarder function provides fresh bakery products for morning breakfast without a night shift – the products ferment overnight in cooling mode and are baked in the morning. In restaurants that bake their own bread or fresh rolls for guests, compact TECNOEKA proofers ensure consistent fresh product quality every day. BHS supplies TECNOEKA proofers to HoReCa establishments.
Frequently asked questions
What capacity (number of trays) is needed for a bakery producing 200 croissants per day? The required proofer capacity depends on the volume needed per baking cycle and the number of baking cycles per day. BHS consultants will help calculate the appropriate proofer size according to the production plan.
Is the TECNOEKA proofer suitable for gluten-free dough? In principle, yes – the proofer controls temperature and humidity regardless of the dough type. However, gluten-free dough ferments differently than traditional dough, so fermentation parameters may need adjustment. Check with BHS consultants.
