A leaf tip replaces the cutting edge on the rotating blade of a commercial meat slicer. The blade spins at high speed, slicing through joints, cured meats and cheeses by drawing the product across the sharpened edge. A leaf tip is a small, replaceable segment that bolts onto the main blade body, allowing the operator to renew only the worn section rather than the entire blade. This design reduces downtime and cost in busy kitchens where slicers run for hours each day.
To fit the leaf tip, the operator first switches off and unplugs the slicer, then removes the blade guard. The old tip is unbolted from the blade carrier and the new one aligned with the mounting holes. Once secured, the blade guard is refitted and the slicer tested on a scrap piece of meat to confirm the edge is true and the thickness setting still accurate.
The Stalgast Leaf Tip D-2 mm is 10 mm in length and made from D-2 tool steel, a high-carbon, high-chromium alloy that holds its edge longer than standard stainless steel. This material resists wear and corrosion, maintaining a sharp cut through repeated slicing cycles without frequent re-sharpening.
The 10 mm size indicates the length of the tip segment, which determines how much of the blade's circumference is renewed with each replacement. A shorter tip may be more economical for light use, while a longer one suits heavy production where the blade edge wears faster.
Cleaning follows the same routine as the main blade: remove the tip after use, wash in warm soapy water, rinse and dry thoroughly before storage. Avoid abrasive pads that can scratch the surface and reduce edge retention.
This leaf tip fits Stalgast commercial meat slicers and may be compatible with other brands that use the same blade mounting system. Check the blade carrier and mounting hole pattern before ordering.
