A confectionery piping tip shapes mixtures of cream, chocolate, meringue or icing into precise patterns. The metal tip attaches to a piping bag and directs the flow of the mixture through its opening; the size and shape of that opening determine the width and design of each line or rosette. A 10 mm tip produces a broad, even ribbon that is used for borders, lettering and large decorative elements on cakes and pastries.
The operator fills a piping bag with the prepared mixture, fits the 10 mm tip into the bag's coupler and secures it with a ring. Gentle, steady pressure on the bag forces the mixture through the tip; the speed and angle of the hand control the thickness and direction of the line. Once the decoration is complete, the tip is removed, washed and stored for the next use.
