A perforated gastronorm container holds food above the water line in a convection steam oven, letting hot vapour circulate evenly through every layer. The holes allow condensate to drain away so vegetables, fish and dumplings emerge with a firm texture and no waterlogging. Because the container itself never touches boiling water, it remains cool enough to handle with bare hands once the oven door is opened.
To use, load the raw or par-cooked food into the container, slide it onto the oven rack, set the desired temperature and humidity, and start the programme. The oven's fan draws steam through the perforations, cooking the contents uniformly without stirring. When the cycle ends, lift the container straight out; the holes let excess moisture drip back into the oven well, leaving the food ready to serve or to hold in a bain-marie.
The container is made of stainless steel, so it resists corrosion and staining from acidic or salty foods. Its 325 mm by 354 mm footprint matches the GN 2/3 standard, fitting most professional steam ovens, combi ovens and hot cupboards. A height of 100 mm gives enough volume for a single layer of larger items or a shallow bed of smaller pieces. The 8 L capacity lets the container hold a full service portion without crowding, which would slow the steam's flow.
Stacking lugs on the rim allow multiple containers to be nested when empty, saving cupboard space. The same rim gives a secure grip for lifting, even when wearing oven gloves. A temperature range from -40 °C to +300 °C means the container can move directly from a blast freezer to a steam oven without risk of warping or cracking.
Cleaning is straightforward: the smooth stainless steel surface and open perforations let food debris wash out under a tap or in a commercial dishwasher. No corners or crevices trap residue, so the container dries quickly and is ready for the next use.
This model is designed for steaming in convection steam ovens, where the perforations are essential for even heat distribution and moisture control.
