Gas pastry oven with touch panel. 16 trays 600 x 400 mm
A gas pastry oven that combines convection, steam and dry-heat cycles in a single chamber, the Tecnoeka MKF 1664 G TS is built for bakeries, patisseries and large-scale catering kitchens. The unit burns gas to heat a radiant element at the base of the chamber; a fan mounted on the rear wall draws air across the element, then circulates it through a specially shaped grid. This Airflowlogic system creates a smooth, even current that eliminates hot spots and ensures uniform colour and texture on every tray. Steam is added on demand by Humilogic technology: water is sprayed into microscopic droplets by nozzles built into the fan hub, then flung outward by centrifugal force to saturate the chamber instantly. When the programme calls for dry heat, Drylogic opens a valve to admit fresh air and closes a second channel to vent excess steam and moisture. The operator can therefore switch between crisp crusts, soft interiors and glazed finishes without moving the product to a separate appliance. Operation begins by selecting one of 500 programmable recipes or creating a new one. Each recipe can include up to ten steps, each with its own temperature, humidity level and duration. A quick-access button stores the most frequently used programmes for instant recall. Once the recipe is chosen, the touch-sensitive display guides the operator through loading the trays, setting the desired end-point and starting the cycle. The oven door opens to 60°, 90°, 120° or 180° and locks at each position, allowing safe access even when the chamber is hot. During the cycle the display shows real-time temperature, humidity and remaining time; at the end it logs the data via HACCP protocol for food-safety records. The chamber is constructed from 10 mm AISI 304 stainless steel, a grade chosen for its resistance to corrosion and thermal stress. The door is fitted with heat-reflecting glass so the product can be monitored without opening. Four adjustable legs level the unit on uneven floors and raise it to a comfortable working height. A USB port on the control panel allows recipes to be downloaded from a computer or shared with other Tecnoeka ovens; Wi-Fi connectivity enables remote monitoring and software updates. The 30 kW gas burner draws a substantial load, so the oven must be connected to a dedicated gas line sized for commercial catering equipment. The 930 mm width, 1160 mm depth and 2060 mm height determine the space it occupies on the floor and the clearance needed around it for ventilation and service. At 277.2 kg the unit is moved on a pallet truck or forklift; once in place it remains stationary. The full-height stainless-steel chamber and removable fan grid let you wipe every surface dry in minutes after the last batch of croissants comes out. The stainless-steel chamber can be wiped down with a damp cloth and mild detergent after each service; the fan grid and spray nozzles are removed for descaling when limescale becomes visible. The door seal should be inspected weekly for cracks and replaced if necessary to maintain an airtight closure. HACCP data stored on the USB drive can be archived or printed for health-inspection records. The MKF 1664 G TS is part of Tecnoeka's Millennial Cooking series, a line of professional gas ovens designed for high-volume production of pastries, meats, fish, poultry, seafood and vegetables.
