A hot granite surface keeps prepared dishes at serving temperature without drying or overcooking. The thick stone slab absorbs and radiates heat evenly across its entire area, eliminating hot spots and cold zones that metal surfaces can create. Because granite has high thermal mass, it maintains a steady temperature even when trays are swapped or lids are lifted, so each portion stays at the correct warmth until it is plated.
The operator places two standard GN1/1 gastronorm trays directly on the granite top. A single control knob sets the desired temperature between +30 °C and +85 °C, covering everything from gentle warming to holding hot sauces or grilled items. Once the set point is reached, the slab holds that temperature without cycling, so there is no fluctuation in dish quality. The adjustable legs allow the surface to be levelled or raised to match adjacent worktops, preventing spills when trays are slid on or off.
Construction is a solid granite slab mounted on a stainless-steel frame with four adjustable feet. The granite is sealed and polished for food contact, while the frame resists corrosion from spills and cleaning chemicals. The 230 V, 50 Hz supply is standard for British commercial kitchens, drawing 1.6 kW when heating and less once the slab reaches temperature.
The footprint of 830 mm by 620 mm fits neatly between a bain-marie and a pass, while the height range of 20 mm to 270 mm allows the unit to sit flush with existing counters. Because the granite is heavy, the unit is moved only when empty and positioned before trays are loaded.
Cleaning is done after the surface has cooled. The granite is wiped with a damp cloth and mild detergent, then dried to prevent water marks. The stainless-steel frame is cleaned with a non-abrasive pad to remove grease without scratching. No disassembly is required, and the sealed granite does not absorb odours or stains.
The Stalgast hot granite surface is listed in the catalogue under hot-holding equipment, alongside heated shelves and pass-through warmers.
