A cold chafing dish keeps prepared food chilled while it is displayed on a buffet line. Instead of heating elements, the unit circulates cooled air beneath the gastronorm trays. A compressor and evaporator coil pull heat away from the food, maintaining a steady low temperature without freezing. The method prevents bacterial growth and preserves texture, colour and flavour for hours without drying or over-chilling the dishes. The operator loads up to four GN1/1 trays into the single refrigerated chamber. A shelf inside the cabinet supports the trays at the correct height. The temperature is set between +30 °C and +95 °C using a control panel on the front of the unit. Once the desired temperature is selected, the compressor starts and the internal fan distributes cold air evenly across the trays. The display remains chilled until the food is removed or the unit is switched off. The cabinet is constructed entirely from stainless steel, including the exterior, interior and the shelf. The 230 V, 50 Hz power supply matches standard UK commercial circuits. The footprint of 1465 mm wide, 735 mm deep and 880 mm high fits most buffet counters while leaving space for adjacent hot chafing dishes or serving utensils. The seamless stainless steel interior lets you slide trays in and out without snagging, so spills stay on the tray and not on the cabinet walls. The shelf can be removed for thorough cleaning. No additional maintenance is required beyond regular defrosting of the refrigeration system to keep the evaporator coil clear of ice. The unit is designed for 4 GN1/1 gastronorm trays with a 200 mm depth rating. No variants or additional configurations are listed for this article.
