A cold chafing dish keeps prepared food chilled while it is displayed or held ready for service. Instead of heating elements, the unit circulates cold air beneath the pans, drawing heat away from the food and maintaining a safe temperature above freezing. This method prevents bacterial growth without drying or over-cooling the contents, making it suitable for buffets, banqueting and large-scale catering where food must stay fresh for extended periods. The operator loads up to four GN1/1 gastronorm pans into the single refrigerated chamber. After the pans are in place, the unit is switched on and the thermostat set between +30 °C and +95 °C. The refrigeration system starts, and the fan distributes cold air evenly across the pan surfaces. Once the target temperature is reached, the system cycles on and off to hold the setting. Food remains chilled and ready for service until it is removed. The construction is stainless steel throughout, including the exterior, interior and supporting frame. A cupboard beneath the refrigerated chamber provides enclosed storage for serving utensils, condiments or additional pans. Controls consist of a thermostat dial that sets the holding temperature within the stated range. A power switch starts and stops the refrigeration cycle. The 3.2 kW power rating indicates the load on the electrical circuit; the unit requires a single-phase 230 V, 50 Hz supply. The temperature range of +30 °C to +95 °C allows holding chilled food above the danger zone while avoiding freezing. The footprint of 1465 mm by 735 mm fits standard worktop depths and allows side-by-side placement with other buffet equipment. The 880 mm height clears most serving counters and permits comfortable access to the cupboard below. After service, the seamless stainless-steel liner and lid lift out so the refrigerated well can be sanitised without moving the entire unit from the buffet line. The refrigeration coils should be vacuumed periodically to remove dust and maintain efficiency. The cupboard interior is cleaned in the same way as the main chamber. The product is listed in the Stalgast catalogue under refrigerated buffet and holding equipment.
