SPARE PARTS

A gas hob built for continuous service in professional kitchens, where the open flame transfers heat instantly to pans and pots. The burner draws gas through a nozzle, mixes it with air, and ignites the mixture at the port. The size of the port and the gas pressure determine the power output; larger ports and higher pressures produce stronger flames for rapid boiling, while smaller ports give a controlled simmer. Each burner is independently controlled, so the hob can run multiple processes at once—searing on one ring, reducing on another, holding a sauce warm on a third—without cross-contamination of flavours or temperatures. The sequence of use is straightforward. The operator positions the pan on the cast-iron grate, opens the gas tap, and ignites the burner with the built-in pilot or an external lighter. Once lit, the flame is visible and adjustable from full power down to one-third for simmering. A flame-failure safety device cuts the gas supply if the flame goes out, preventing unburned gas from accumulating. When the cooking is finished, the tap is closed, the flame extinguishes, and the pan is removed. The hob remains hot for a short period, so caution is needed until the surface cools. Construction is heavy-duty. The hob body is sheet steel, the grates are cast iron, and the burners are brass. The drip tray beneath the burners is removable and dishwasher-safe, allowing quick cleaning between services. Adjustable legs at each corner level the hob on uneven floors and raise it to a comfortable working height. The controls are simple rotary knobs, one per burner. Each knob sets the gas flow from off through simmer to full power. The hob is supplied for natural gas (model 611) or propane/butane (model 613), and alternative gas versions G27 and G31 are also available. The total power output of 32.5 kW is distributed across six burners: one small ring at 3.5 kW, three medium rings at 5 kW each, and two large rings at 7 kW each. The footprint of 1200 mm by 700 mm fits standard worktop depths and allows side-by-side installation with other hobs or ovens. The height of 850 mm matches most under-counter extraction canopies. The removable cast-iron grates and burner caps lift off so the hob can be run through a commercial dishwasher after a busy service. The cast-iron grates and the removable drip tray can be washed in a dishwasher. The burner caps and ports should be brushed free of debris after each service to maintain even flames. The hob surface around the burners is wiped down with a damp cloth; abrasives are not needed and may damage the finish. Variants are the two gas types—natural gas (611) and propane/butane (613)—plus the alternative gas versions G27 and G31. The article number 979611 covers the standard configuration.
