Gas convection oven with BLACK MASK technology touch panel. 7 trays GN 1/1
A gas-fired convection oven circulates hot air around the cooking chamber with a fan, spreading heat evenly across every shelf. The fan speed can be adjusted to control how quickly the air moves, which determines whether dishes brown, crisp or remain moist. Steam is introduced directly into the chamber to prevent drying and to lock in flavour, while the temperature is held steady across the entire load, eliminating hot and cold spots that can spoil large batches of food.
The Tecnoeka MKF 711 G BM is operated through a sequence of pre-set programmes or manual settings. Each programme can store up to ten steps, allowing the operator to set temperature, fan speed and steam level for each phase of cooking. The oven is loaded with trays, the door closed, and the chosen programme selected. The display guides the user through each step, showing remaining time and current conditions inside the chamber. Once the cycle completes, the oven signals readiness and the trays are removed.
The cooking chamber is constructed from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning. The exterior follows a minimalist design with a compact footprint, fitting into kitchens where space is limited. Airflowlogic™ technology uses redesigned sumps and optimised air recirculation to maintain consistent temperatures throughout the chamber, while Humilogic™ introduces water directly behind the impeller, creating high humidity levels for steam cooking and reducing energy consumption.
Controls include a digital interface for selecting programmes, adjusting fan speeds, setting steam levels and monitoring the cooking process. The oven offers 100 programmes, each with up to ten steps, ten steam levels and ten fan speeds, allowing precise control over cooking conditions for different types of food.
The 13.5 kW power rating indicates the gas load required, which must be supplied by a dedicated circuit capable of handling the demand. The temperature range of 30 to 260 °C covers low-temperature holding, proofing, baking and high-heat roasting. The weight of 108.45 kg means the unit is moved with a trolley or two-person lift, and the dimensions of 730 mm wide, 849 mm deep and 951 mm high determine the space it occupies on the worktop or floor.
Cleaning involves wiping down the stainless steel interior after each use to remove food residue and grease. The sumps and air recirculation system should be inspected regularly to ensure no blockages occur, which could affect airflow and cooking performance. The exterior surfaces are cleaned with a damp cloth and mild detergent, avoiding abrasive materials that could damage the finish.
The MKF 711 G BM is part of the Millennial Black Mask Cooking series, designed for catering and trade enterprises producing gastronomic products. It meets HACCP standards for food safety, ensuring it can be used in environments where hygiene is critical.
