Gas convection oven with touch panel. 20 trays GN 1/1
A gas convection oven circulates hot air around food using a powerful fan, ensuring even cooking and browning without the need to rotate trays. The fan draws heat from gas burners positioned around the chamber, distributing it uniformly so every shelf receives the same temperature. This method reduces cooking times and energy use compared to static ovens, while maintaining moisture levels through controlled airflow and steam injection. The result is consistent texture and colour across large batches, essential for high-volume catering operations.
The Tecnoeka MKF 2011 G TS follows this principle with advanced airflow management. Airflowlogic technology shapes the fan grid and chamber geometry to eliminate dead zones, while Humilogic technology atomises water into microscopic droplets, spreading them evenly via the fan's centrifugal force. Drylogic technology then regulates steam levels, removing excess moisture through a controlled vent to prevent sogginess or over-drying. These systems work together to adapt the oven's environment to each dish, whether roasting meat, baking confectionery or steaming vegetables.
To operate the oven, the user selects a recipe from the touch-sensitive display or programmes a new one with up to ten cooking steps. The quick-access button retrieves frequently used settings instantly. Once loaded, the oven maintains the set temperature between 30 °C and 260 °C, adjusting humidity and airflow automatically. The door's heat-reflecting glass allows visual monitoring without opening, while the handle's locking mechanism holds it at 60°, 90°, 120° or 180° for safe loading. After cooking, the oven logs HACCP data via USB or Wi-Fi for compliance records.
The chamber is constructed from AISI 304 stainless steel with 10 mm thickness, resisting corrosion and thermal stress. The exterior dimensions of 930 mm wide, 1162 mm deep and 1954 mm high fit standard kitchen layouts, while adjustable legs compensate for uneven floors. The 277 kg weight requires a sturdy worktop or dedicated stand, and the IPX5 protection rating allows thorough cleaning with water jets without damaging internal components.
Controls include a 42-language touchscreen for recipe selection, temperature adjustment and humidity settings. The USB port enables recipe sharing between units or updates from Tecnoeka's database, while Wi-Fi connectivity allows remote monitoring and data transfer. The 30 kW power rating indicates a high-capacity gas supply is needed, suitable for commercial kitchens with dedicated gas lines.
Cleaning involves wiping the stainless steel chamber after each use to remove food debris, while the fan's spray nozzles and steam vents require periodic descaling to maintain performance. The door's heat-reflecting glass should be cleaned with non-abrasive solutions to preserve visibility. The oven's construction allows disassembly of key components for deep cleaning, though the entry does not specify which parts are removable.
The MKF 2011 G TS is part of Tecnoeka's Millennial Cooking series, designed for catering establishments and food production facilities. It supports 500 programmable recipes, including 40 presets, and integrates with HACCP protocols for food safety compliance.
