The ventilation hatch creates a steady circulation of air, letting moisture escape without forming condensation on the container walls or the food itself. This method keeps fruit and vegetables crisp and extends their shelf life while they are moved between storage, preparation and service areas.

The container is loaded with produce, the ventilation hatch adjusted to the desired opening, and the lid secured. During transport, the hatch remains in place, permitting continuous evaporation of excess moisture. Once the container reaches its destination, the lid is removed and the contents unloaded without the dampness or sogginess that sealed containers can cause.
