Electric convection oven with a 7” touchscreen and capacity for 20 GN 1/1 trays. Power 36.25 kW

A convection oven circulates hot air around food with a fan, distributing heat evenly and reducing cooking times compared to static ovens. The fan's speed can be adjusted, allowing control over how aggressively the air moves—gentler for delicate items like pastries, stronger for roasting or baking at higher temperatures. This method ensures consistent results across all trays, eliminating hot spots and the need to rotate dishes during cooking.
The STG 201 V7 PLUS from FM Industrial is built to hold twenty 1/1 GN trays, spaced 67 mm apart to accommodate dishes of varying heights. The operator loads the trays, selects a cooking mode, and sets the temperature—up to 300 °C—along with fan speed and any additional functions like steam injection or climate control. The V7 touchscreen interface displays the chosen programme, including preheating, cooking, and cooling phases, while the reverse function allows the oven to alternate air direction for even more uniform results. An end-of-cycle alarm signals when cooking is complete, and the hold mode keeps food at a set temperature until service.
The oven's construction includes a folding glass door for easy access, LED interior lighting to monitor progress without opening the door, and a safety thermostat to prevent overheating. A 3/4” water connection supplies steam for humidity control, while the multipoint probe and Delta T function track internal food temperatures for precision. The self-cleaning system reduces manual scrubbing, and the USB port allows for recipe storage or software updates.
With a footprint of 880 mm wide, 915 mm deep, and 1865 mm high, the unit fits into standard kitchen layouts while its 260 kg weight requires a sturdy floor or reinforced worktop. The 36.25 kW power draw demands a 400 V three-phase electrical supply, typical for professional catering equipment. The 67 mm tray spacing dictates the maximum height of dishes, while the 20-tray capacity suits high-volume kitchens needing to cook multiple items simultaneously.
Cleaning involves wiping the interior after use, running the self-cleaning cycle for deeper maintenance, and checking the water connection for leaks. The touchscreen and controls should be kept dry, and the fan inspected periodically to ensure unobstructed airflow. The folding glass door and LED lighting simplify daily upkeep, while the USB port allows for recipe backups or system updates without manual reprogramming.
The V7 PLUS model includes fermentation, regeneration, and multicooker functions, expanding its use beyond standard baking and roasting. The editable recipe book stores custom programmes, and the scheduling feature allows pre-setting cooking times for off-peak operation. The door microphone provides audible alerts, and the climate control system adjusts humidity levels for consistent results across different dishes.
