A high speed oven accelerates cooking by combining two heat sources: a convection fan circulates hot air around the cavity, while microwaves penetrate the food to heat it from within. The convection element raises the air temperature quickly, and the fan ensures even distribution, preventing cold spots. Microwaves excite water molecules inside the food, generating heat without waiting for conduction. Together, the two methods shorten cooking times while maintaining texture and moisture, making it possible to roast, bake, grill and reheat in a fraction of the time a conventional oven would take.
The operator loads up to three 430 × 340 mm trays into the cavity, selects a stored recipe or sets time and temperature manually on the touch panel, and starts the cycle. The oven displays progress and switches off automatically when the programme ends. A cyclonic cooling system keeps the exterior surfaces safe to touch during operation, and an integrated maintenance mode simplifies routine checks.
The STF 42 is built with a stainless-steel exterior and interior, designed for daily use in a busy kitchen. The high-resolution touch panel allows precise control over cooking parameters, and an integrated USB port enables recipe uploads and HACCP data downloads. WiFi connectivity permits remote monitoring and recipe management from a central kitchen system.
The 7.2 kW total power rating indicates the load the oven places on the electrical supply; a 400 V three-phase circuit is required. The 275 °C maximum temperature opens processes such as roasting, baking and finishing that lower-temperature appliances cannot achieve. The 110 kg weight means the unit is floor-standing and requires two people to move safely. The 590 × 750 mm footprint determines the space it occupies on the worktop or floor.
Cleaning follows from the construction: the stainless-steel cavity and trays wipe down with a damp cloth, while the touch panel can be cleaned with a mild detergent. The cyclonic cooling system reduces dust accumulation on internal components, extending intervals between deeper maintenance. The included maintenance mode guides staff through routine checks without disassembly.
One tray is supplied with the oven; additional trays are available separately. The catalogue places the STF 42 in the high-speed cooking section alongside other rapid-cook appliances.
