Ultra-fast cooking microwave oven with 5” touch screen and capacity for 3 43x34 trays
- : FM industrial
- Article number: STF 41
A high speed oven that layers convection heat with microwave energy to cook food in a fraction of the time a conventional oven requires. The convection element heats air and a fan circulates it around the cavity, browning and crisping surfaces. Simultaneously, microwave energy penetrates the food, driving moisture from the inside out. The two processes work in tandem: convection seals and colours while microwaves reduce core cooking time, producing results that are both fast and restaurant-quality.
The operator loads one of the three 430 × 340 mm trays—one is supplied with the unit—sets a stored recipe or programmes time and temperature manually on the high-resolution touch panel. The oven starts, the cyclonic cooling system keeps the exterior cool, and the integrated maintenance mode runs automatic cleaning cycles when needed. Once cooking finishes, the oven logs HACCP data via WiFi or a USB port, allowing kitchen records to be updated without manual entry.
The STF 41 is built as a single stainless-steel cabinet with a reinforced worktop. A 400 V three-phase supply powers the 5.6 kW total load, suitable for a dedicated commercial circuit. The 98 kg weight requires two people or a trolley to move the unit, and the 590 × 750 mm footprint fits standard worktop depths while leaving space for tray handling on either side.
Controls include a touch panel for recipe selection, manual programming, and maintenance scheduling. The USB port exports HACCP logs, and WiFi allows remote recipe updates and data transfer. An internal recipe book holds up to 300 programmes, so frequently used dishes can be recalled with a single touch.
The temperature range reaches 275 °C, covering everything from delicate pastries to roasted meats. The three-tray capacity lets a single oven handle multiple dishes at once, increasing throughput during service peaks. The cyclonic cooling system prevents overheating, extending component life and maintaining a comfortable kitchen temperature.
Cleaning follows from the construction: the stainless-steel interior wipes down after each service, and the maintenance mode runs automatic descaling and sanitising cycles. The touch panel is sealed for easy wipe-cleaning, and the cooling vents should be vacuumed monthly to remove dust.
The STF 41 is listed in the FM Industrial catalogue under High Speed Ovens, Combined Cooking Systems.
