Ultra-fast cooking microwave oven with 5” touch screen and capacity for 30x30cm tray
- : FM industrial
- Article number: STF 21
A high speed oven that layers convection heat, microwave energy and impingement airflow to cook food in a fraction of the time a conventional oven requires. The convection element raises the air temperature while the microwave penetrates the food, and the impingement system directs high-velocity hot air onto the surface, sealing and browning without drying the interior.
The operator places a single 300 mm by 300 mm tray on the rack, selects a pre-programmed recipe from the touch panel or sets time and temperature manually, then starts the cycle. The oven reaches temperatures up to 275 °C, and the integrated catalytic converter breaks down cooking vapours so no external extraction is needed. A cyclonic cooling system keeps the exterior cool to the touch while the interior maintains the set temperature. Once the cycle ends, the oven automatically switches to standby and the touch panel displays the next step.
The cabinet is constructed from stainless steel, with a high-resolution colour touch panel on the front. The panel stores up to 300 recipes, each with multiple stages, and allows HACCP data to be downloaded via the USB port for record-keeping. The total power draw of 3.75 kW requires a dedicated 230 V circuit capable of handling the combined load of the convection element, microwave generator and impingement fan. The unit weighs 78 kg, so it is typically positioned on a sturdy worktop or a mobile stand with locking castors. Its footprint of 425 mm by 630 mm fits into most professional kitchen layouts without occupying more space than a standard under-counter oven.
Cleaning involves wiping the stainless-steel interior and exterior with a damp cloth and mild detergent, then running a self-clean cycle that uses the catalytic converter to burn off residue. The touch panel can be cleaned with a soft, dry cloth to avoid damaging the screen. The recipe book and HACCP data remain stored in the memory unless manually deleted, so no daily backup is required.
The STF 21 is categorised under high speed ovens in the FM Industrial professional catering equipment range.
