A bakery oven designed for consistent, large-volume baking, the FM Industrial STB 606 V7 combines forced convection with precise temperature management. Hot air circulates through the chamber via a variable-speed fan, ensuring even heat distribution across every tray. This method eliminates cold spots and allows simultaneous baking of different products without flavour transfer. The oven's climate control system regulates humidity, preventing crusts from drying out or pastries from becoming soggy, while the turning reverser rotates trays mid-cycle to guarantee uniform browning on all sides.
Operation begins with loading up to six GN 1/1 trays of 600 x 400 mm into the chamber. The V7 touchscreen control system offers pre-set bakery programmes, including preheating, fermentation, and regeneration modes. Fan speed adjusts in ten increments to match the product—gentle airflow for delicate pastries, stronger circulation for dense breads. A multipoint probe monitors internal temperatures at multiple points, while the Delta T function maintains a precise temperature differential between the core and surface of baked goods. Once the cycle completes, an audible alarm signals readiness, and the cooling mode gradually reduces chamber temperature to prevent thermal shock.
The STB 606 V7 is constructed from stainless steel, with an insulated door that includes a microphone for audible leak detection. A safety thermostat cuts power if temperatures exceed safe limits, and an LED interior lamp illuminates the chamber for visual checks without opening the door. The 3/4” water connection supports steam injection, essential for crusty breads and artisanal loaves. The oven's footprint of 880 x 905 mm fits standard worktop layouts, while its 116 kg weight requires a sturdy base or trolley for mobility.
Controls include a USB port for recipe storage and updates, a self-cleaning function that automates descaling, and a multicooker mode that combines baking, holding, and timed sequences. The fermentation mode maintains low temperatures for dough proving, while the planning and hold mode keeps finished products at serving temperature without overcooking. The included bakery recipe book provides tested programmes for common items like sourdough, croissants, and cakes.
The 10.65 kW power rating requires a 400 V three-phase supply, typical of commercial kitchens. The 300 °C upper temperature limit accommodates high-heat baking, from baguettes to pizzas, while the six-tray capacity allows batch production without crowding. Cleaning involves wiping the stainless steel interior after use, with the self-cleaning cycle handling deeper maintenance. The oven's design supports both standalone use and integration into larger bakery lines, with the USB port enabling customisation for specific production needs.
