Spiral mixer: stainless steel kneadingthrough and hook;control panel.
A dough mixer drives a spiral or hook through the mass of flour, water, yeast and salt, stretching and folding the gluten strands until they form a smooth, elastic network. This mechanical action replaces hand-kneading, ensuring even hydration and consistent texture across large batches. The mixer's motor turns the tool at controlled speeds, while the trough holds the dough in place and guides it back into the path of the hook. For heavy doughs—dense, low-hydration mixes such as bagel, pizza or rye—the motor must deliver steady torque without overheating, and the tool must reach every part of the trough to prevent unmixed pockets.
The operator loads the ingredients into the stainless steel trough, lowers the guard, and selects a speed level on the digital panel. Ten preset speeds let the user match the tool's motion to the dough's stiffness: lower speeds for initial mixing and higher speeds for final development. An infinitely variable control fine-tunes the speed between the presets. The panel also sets the operating time; when the countdown ends, a sound signal alerts the operator. A “Pause” function stops the tool at any moment, allowing the dough to be scraped from the sides or checked for consistency. Once the cycle finishes, the trough can be reversed to tip the dough out without lifting.
The mixer's construction centres on a 23 litre stainless steel trough that resists corrosion and is easy to sanitise. A metal guard pivots over the trough to prevent hands or utensils from contacting the moving tool. Four feet raise the unit off the worktop and absorb vibration, keeping the mixer stable during operation. All parts that touch the dough are made of stainless steel, meeting food-safety standards without coatings that could chip or wear.
The 1.3 kW motor draws power from a 230 V single-phase circuit, the standard supply in professional kitchens. The weight of 90 kg means the mixer stays in place during use and requires two people or a trolley to move. The footprint of 730 mm by 550 mm fits on most worktops, while the 770 mm height allows the operator to reach the controls without stooping. The 23 litre volume corresponds to a maximum dough capacity of 12 kg, suitable for batches that fill a single baking sheet or a small deck oven.
Cleaning involves removing the trough for washing, wiping the digital panel with a damp cloth, and brushing flour from the tool and guard. The stainless steel surfaces can be sanitised with food-safe chemicals, and the feet can be lifted to clean underneath the unit. The mixer is available in two larger capacities, each with a correspondingly higher dough limit and motor rating, but the same control features and construction materials.
