A perforated gastronorm container circulates steam evenly around food, preventing soggy bases and speeding up cooking. The small holes allow hot vapour to rise through the load while condensate drains away, so vegetables, fish and dumplings emerge evenly cooked and still holding their texture.
To use, fill the container with prepared ingredients, slide it onto the oven shelf or combi-steamer rack, and set the programme. The same perforations that admit steam also let the operator lift the container with tongs or a cloth without touching the hot metal. When the cycle finishes, the container comes out ready to place on a worktop or stack with others of the same size.
The tray is formed from a single sheet of stainless steel, folded and welded at the corners for strength. The base and sides are uniformly perforated, leaving no dead spots where steam cannot reach. A rolled rim around the top edge adds stiffness and protects the operator's hands during handling.
Controls are not required; the container simply sits inside the oven or steamer and follows the appliance's own settings.
The 530 mm by 325 mm footprint matches the GN1/1 standard, so it fits most professional combi-steamers, bain-maries and serving counters. The 100 mm depth holds 14 litres of ingredients, enough for a full service portion without crowding. The stainless steel construction withstands temperatures from -40 °C to +300 °C, allowing the same container to move from freezer to oven without risk of warping or corrosion.
Because the tray is dishwasher-safe, cleaning is a single rinse under a tap followed by a cycle in the machine. The perforations let water flow through, so no residue is trapped inside. Stacking the containers saves cupboard space between services.
This model is supplied as a single perforated GN1/1 container in 100 mm depth.
