A perforated stainless steel container in the GN1/1 size holds food while allowing steam to circulate freely around it. The holes let hot vapour rise through the contents, cooking them evenly without pooling liquid at the base. This method keeps vegetables crisp, meats juicy and baked goods light, making it the standard choice for convection steam ovens.
The operator loads the container with prepared food, slides it into the oven rack, and sets the steam programme. Once cooking is complete, the container is lifted out and the food transferred or served directly. The same container can be chilled or frozen when empty, or used to hold pre-cooked items during service.
The container is made from stainless steel, which resists corrosion, does not react with food acids and withstands repeated dishwasher cycles. Its flat rim and uniform depth allow stacking, so multiple containers occupy the same footprint on a shelf or in a cupboard.
A single lever or clip on the oven rack secures the container in place. No additional controls are fitted to the container itself.
The 530 mm by 325 mm footprint matches the GN1/1 gastronorm standard, so it fits racks, trolleys and combi-ovens built to that size. The 20 mm depth gives a shallow profile that exposes more surface area to steam, speeding up cooking. The 2.2 L volume holds a single portion or a small batch of ingredients without overcrowding.
Stainless steel construction allows cleaning in a commercial dishwasher. The perforations must be brushed free of food debris before washing to prevent clogging. Stacking the containers with a small gap between them ensures air circulation and faster drying.
This container is supplied in the 20 mm depth only.
It is recommended for use in convection steam ovens.
