A gastronorm container standardises the size of food pans across professional kitchens, allowing them to slide into ovens, bain-maries, refrigerators and trolleys without adaptation. The GN1/1 format is the base unit: every appliance designed to hold a full-size pan accepts this container, so ingredients and prepared dishes move from storage to cooking to service on the same tray.
The container is a rigid stainless steel tray that holds food during every stage of production. Its flat base and straight sides create a uniform shape that stacks neatly, slides smoothly on rails and transfers heat evenly when placed over a heat source or under a refrigeration coil. The depth of 200 mm provides enough volume for bulk ingredients, sauces or plated meals without exceeding the clearance of standard gastronorm racks.
To use the container, the operator fills it with ingredients, covers it if needed, and places it directly into a compatible appliance. When stacked, the rims interlock so that multiple containers remain stable during transport. After use, the container is removed, emptied and sent for cleaning.
The construction is a single sheet of stainless steel, formed into a rectangular pan with reinforced rims for strength. The material resists corrosion, does not react with food and withstands repeated washing at high temperatures.
The container has no controls; its function is passive storage and transport.
The dimensions of 530 by 325 by 200 mm define the footprint and the volume of 26 litres. This footprint matches the GN1/1 standard, so the container fits every appliance built to that specification. The 26 litre volume indicates the amount of food it can hold without spillage. The weight of the empty container is light enough for one person to lift when full, yet sturdy enough to support stacking.
The temperature range of -40 to +300 °C means the container can go from a blast freezer to a hot cupboard without warping or degrading, allowing the same pan to be used for chilled storage, cooking and hot holding.
Cleaning is straightforward: the smooth stainless steel surface is wiped down or placed in a commercial dishwasher. The absence of seams or crevices prevents food particles from becoming trapped, reducing the risk of cross-contamination.
This container is a single variant in the Stalgast gastronorm range, matching the GN1/1 footprint with a depth of 200 mm.
The product is listed in the catering equipment catalogue under Gastronorm Containers.
