A convection oven circulates hot air around food with a fan, eliminating cold spots and cooking dishes evenly without turning. The moving air transfers heat faster than still air, so the oven reaches the set temperature sooner and holds it across every shelf. This method cuts cooking times and keeps textures consistent, whether roasting vegetables, baking pastries or finishing meats.
The RXL 424 holds four GN2/3 trays, each loaded with food and slid onto the wire racks. The operator sets the temperature up to 250 °C and the timer for up to 60 minutes, or selects continuous mode for longer service. An interior lamp lets the chef check progress without opening the door and losing heat. The trays sit 80 mm apart, giving enough clearance for large joints or stacked dishes.
The oven is built with a stainless-steel interior and exterior, and a safety thermostat that cuts power if the temperature rises beyond the set limit. A single-phase 230 V supply powers the 3.1 kW element and fan, drawing the load of a typical commercial circuit. The 640 mm width and 710 mm depth fit on a standard worktop or under a low cupboard, while the 540 mm height leaves room for trays to slide in and out. At 38 kg, two people can lift it onto a trolley or shelf.
The 3.1 kW rating means the oven can hold its temperature under a full load of four trays, keeping service steady during peak hours. The 250 °C maximum opens roasting, baking and finishing processes that need high heat, while the 80 mm tray spacing allows tall items like whole chickens or stacked sheet pans. The 230 V connection matches the standard single-phase supply in British kitchens, so no special wiring is needed.
Cleaning follows from the construction: remove the wire trays and wash them separately, then wipe the stainless-steel interior and door with a damp cloth. The exterior can be cleaned with a mild detergent, avoiding abrasives that could scratch the surface. The interior lamp is sealed and does not need maintenance.
The RXL 424 is supplied with four wire trays as standard. It is listed in the FM Industrial catalogue under convection ovens for medium-volume kitchens.
