Convection oven with manual control panel and capacity for 4 trays of 430x340 or GN 2/3.

A convection oven circulates hot air around the cooking chamber with a fan, spreading heat evenly across every tray. This method eliminates cold spots and speeds up cooking by transferring heat directly to the food, rather than relying on radiant heat alone. The result is consistent browning and faster bake times, essential for batch production in professional kitchens.
The RXL 304 V26 loads four standard GN 2/3 gastronorm trays, each 430 by 340 millimetres. The operator sets the temperature up to 250 degrees Celsius using the manual dial, then selects a cooking time up to sixty minutes or switches to continuous mode. Indicator lights show when the oven is heating and when the timer is running. The double-glazed door retains heat while allowing a clear view of the trays inside.
Inside, the AISI 430 stainless steel chamber resists corrosion and reflects heat evenly. Three perforated aluminium trays are supplied, spaced eighty millimetres apart to allow air to circulate above and below each tray. The dual-position racks adjust to hold either the supplied trays or deeper containers. An ergonomic handle with a rounded grip makes opening and closing the door easier during service.
The oven draws 3.1 kilowatts from a 230-volt single-phase supply, typical for a medium-sized commercial kitchen circuit. Its footprint of 590 by 625 millimetres fits on most worktops, while the thirty-four-kilogram weight allows two people to move it without a trolley. The maximum temperature of 250 degrees Celsius covers baking, roasting and reheating, but not high-temperature grilling or broiling.
Cleaning involves removing the trays and wiping the stainless steel interior with a damp cloth. The perforated trays can be washed in a commercial dishwasher. The double-glazed door should be cleaned with a non-abrasive cleaner to avoid scratching the glass. The safety thermostat prevents overheating and does not require regular adjustment.
A variant, the RXL 304 H V26, includes a built-in humidifier for an additional charge.
The oven is listed in the FM Industrial catalogue under convection ovens for professional catering.
