The reversing fan in this bakery oven keeps every sheet of croissants or loaves of bread browning at the same rate, even when the oven is fully loaded with four trays. The reversing fan in the RX 604 PLUS V26 alternates direction to eliminate cold spots, so batches bake at the same rate whether they sit at the front or the back of the chamber. This method cuts cooking time and keeps colour and texture consistent across large volumes. The operator loads up to four trays of 600 × 400 mm or GN1/1 size, sets the temperature with the manual dial, and programmes the timer for up to 60 minutes or leaves it in continuous mode. Indicator lights show when the oven is heating and when the timer is running. Once the cycle finishes, an alarm sounds and the interior light stays on so the trays can be removed without opening the door unnecessarily. The cooking chamber is made of AISI 430 stainless steel, chosen for its resistance to corrosion and ease of cleaning. A double-glazed door retains heat and reduces energy loss, while a safety thermostat cuts power if the temperature exceeds the set limit. The door microswitch stops the fan when the door opens, preventing hot air from escaping into the kitchen. Tray guides are adjustable to two positions, spaced 80 mm apart, so the oven can hold either full-size trays or smaller items without crowding. A 6.3 kW power rating means the oven draws a steady load that requires a dedicated 400 V three-phase circuit, standard in professional bakeries. The 62 kg weight allows the unit to be moved with a trolley but is stable enough to stay in place on a worktop. The footprint of 820 × 755 mm fits within a typical bakery counter, leaving space for preparation alongside. Cleaning involves wiping the stainless steel chamber after each use to remove residue, and checking the fan blades and tray guides for build-up. The interior light helps spot any areas that need attention. The supplied trays should be washed separately to avoid damaging the oven's non-stick coating. A variant with a built-in humidifier, the RX 604 PLUS H V26, is available for applications that require steam injection. The oven is categorised under bakery equipment in the FM Industrial professional range.
