Convection oven with manual control panel and capacity for 4 trays of 430x340 or GN 2/3.

A convection oven circulates hot air continuously around the chamber with an internal fan, spreading heat evenly across every tray. This forced-air movement eliminates cold spots and speeds up baking, roasting or proofing by transferring energy directly to the food rather than relying on radiant heat alone. The result is consistent colour and texture on every batch, whether baking bread, pastries or sheet cakes.
The RX 304 V26 loads four standard 430 × 340 mm trays or gastronorm GN 2/3 pans. Slide the trays onto the dual-position racks, set the temperature up to 250 °C with the manual dial, and programme the timer for up to 60 minutes or leave it in continuous mode. Indicator lights show when the oven is heating and when the timer is running. The double-glazed door keeps heat inside while letting the operator watch the progress without opening it.
Inside, the chamber is AISI 430 stainless steel, chosen for its resistance to corrosion and ease of cleaning. Three perforated aluminium trays are supplied, allowing air to circulate beneath each item. The distance between trays is fixed at 80 mm, giving enough clearance for most bakery products. An ergonomic handle with a rounded profile makes opening and closing the door comfortable during long shifts.
The 3.1 kW power rating means the oven draws a steady load on a single-phase 230 V circuit, typical of professional kitchens. At 33 kg it can be moved by two people and fits on a worktop or mobile stand. The footprint of 590 × 625 mm leaves space for other equipment on a standard bakery counter.
Cleaning is straightforward: remove the trays, wipe the stainless-steel interior with a damp cloth and mild detergent, and dry it to prevent water marks. The perforated trays can be washed in a sink or dishwasher. A safety thermostat cuts power if the temperature exceeds the set limit, protecting both the oven and the food.
A variant, the RX 304 V26 H, adds a built-in humidifier for crust control on artisan breads and viennoiserie.
The oven is listed in the bakery section of the professional catering catalogue.
