A refrigerated worktop keeps prepared ingredients chilled while they are portioned, plated or assembled. The stainless steel surface sits directly above an integrated refrigeration unit that circulates cold air beneath the tray. This steady, low-temperature airflow maintains the food at a safe holding range without freezing it, so salads, garnishes, desserts and other temperature-sensitive items stay crisp and ready for service.
The operator loads the tray with pre-chilled ingredients, sets the desired temperature between 2 °C and 8 °C, and leaves the unit running. The refrigeration cycle starts automatically, pulling heat from the air under the tray and expelling it at the rear. A thermostat monitors the temperature and cycles the compressor on and off to keep the surface within the set range. No additional steps are needed; the unit runs continuously once switched on.
Construction is a stainless steel top 1000 mm wide and 735 mm deep, mounted on a refrigerated base. The entire unit measures 1465 mm long, 735 mm wide and 880 mm high. The 0.23 kW compressor runs on a 230 V 50 Hz single-phase supply, the standard circuit used in British commercial kitchens.
The temperature range of 2 °C to 8 °C suits holding chilled food that must not freeze or rise above safe storage levels. The 1000 mm width provides a continuous work area for plating or assembling dishes without moving ingredients to a separate table. The stainless steel surface is seamless and easy to wipe, and the refrigeration unit is accessed from the rear for cleaning and maintenance.
Cleaning follows the parts named: the stainless steel top is wiped with a damp cloth and sanitiser after each service; the refrigeration coils at the rear are brushed or vacuumed monthly to remove dust and maintain airflow. No other components are exposed to food or require routine disassembly.
