Conical stainless steel chinois strainer with a diameter of 200 mm. Mesh size 1.8 mm, suitable for filtering, straining, and achieving a smooth, uniform consistency.
A conical chinois strainer refines liquids by letting them flow through a fine mesh while the sloping sides concentrate the product towards the centre. The shape speeds up straining and prevents blockages, giving a smooth, even texture to sauces, broths and purées without the need for pressing or squeezing.
Load the strainer over a receiving bowl or pan, pour the hot or cold mixture into the wide top, and let gravity draw the liquid through the mesh. Larger particles stay inside the cone and can be tipped out once the liquid has drained. The process requires no power, no moving parts and no adjustment—only a steady hand to guide the flow.
The strainer is formed from a single sheet of stainless steel, rolled into a cone and welded at the seam. The 1.8 mm mesh is punched from the same material and spot-welded to the frame, giving a rigid, seamless surface that resists dents and corrosion. The rim is rolled for strength and comfort, allowing the operator to hold the strainer securely over a vessel.
A diameter of 200 mm gives a generous opening for ladling or pouring, while the 170 mm height keeps the strainer stable on the rim of standard gastronorm pans and deep bowls. The stainless steel construction is compatible with all food-safe cleaning agents and can be washed in a commercial dishwasher or sterilised in a steam cabinet.
The 1.8 mm mesh size balances flow rate and filtration: it removes seeds, fibres and coarse particles while allowing the liquid to pass quickly, producing a uniform texture suitable for fine sauces and clear broths. The strainer is supplied as a single piece with no removable parts, simplifying storage and upkeep.
