A chafing dish keeps hot food at serving temperature without cooking it further. The roll-top design uses a metal lid that slides back along rails, letting staff lift out dishes without removing a separate cover. A water pan sits above a fuel holder; the flame heats the water, which in turn warms the food pan above it. This indirect method prevents scorching and keeps the food moist for hours on a buffet line or carving station.
To use the Stalgast Roll-Top 9 litre dish, fill the lower water pan with hot water, then place the food pan inside. Slide the roll-top lid back, load the food, and close the lid. Light the fuel canister in the holder beneath the water pan. The flame heats the water, which gently warms the food above. When the service is over, slide the lid back, remove the food pan, and extinguish the fuel.
The unit is built from stainless steel, including the roll-top lid, water pan, food pan and outer casing. Two fuel holders are supplied, allowing one to be lit while the other is prepared or cooling. The footprint of 670 mm by 520 mm fits on most buffet counters, and the 450 mm height keeps the food within easy reach of guests.
Cleaning follows the construction: wash the water pan, food pan and lid with hot soapy water after each use. Wipe the outer casing and dry all parts before storage. The fuel holders should be emptied of spent canisters and wiped clean.
The Stalgast Roll-Top 9 litre chafing dish is listed in the catering equipment catalogue under buffet and serving equipment.
