A chafing dish keeps prepared food at serving temperature without overcooking it. This Stalgast neutral model uses a water bath heated by an electric element beneath the closet. The heat passes through the water, warming the air inside the closet evenly. Food stays moist and at a steady temperature, ready for self-service without drying out or scorching. The unit is built as a freestanding cabinet on legs. The operator fills the lower tray with water, places the four GN1/1 containers on the rack above it, and closes the hinged glass doors. Once the element is switched on, the water heats and the air inside the closet rises to the set temperature. The doors keep the heat in and allow the food to be seen without opening them. A thermostat maintains the temperature until the food is cleared. Construction is stainless steel throughout, including the water tray, rack, closet and outer casing. The exterior dimensions of 1410 mm wide, 600 mm deep and 850 mm high give it a footprint that fits a standard worktop or buffet line. The 230 V supply connects to a single-phase circuit typical of professional kitchens. The closet holds four GN1/1 gastronorm containers, which are not supplied with the unit. The neutral design means it does not include fuel burners or induction modules; it relies on the electric element and water bath for heat distribution. Stainless steel surfaces and seamless welds let you wipe away grease and food residue without trapping moisture or bacteria between service cycles. The stainless steel water tray lifts out for emptying and washing. The rack and closet interior wipe clean with a damp cloth. The glass doors are removable for thorough cleaning, and the outer casing can be wiped down with a sanitising solution. The unit is placed in the catering catalogue under buffet equipment and hot-holding appliances.
