Brussels baking plate for baking system.
The price is shown without transport costs.
A Brussels baking plate forms the deep, rectangular waffles that define the Benelux café. The cast-iron plates press batter into a grid of thick, crisp squares, each pocket holding syrup, fruit or cream. Heat spreads evenly across the uncoated surface, browning the waffle without scorching, while the weight of the iron keeps the plates closed until the steam has set the structure.
The operator pours batter into the preheated, lightly oiled cavities, closes the hinged plates, and lets the heat do the work. After a set interval the plates open to release two waffles at once, each measuring 165 mm by 105 mm. The depth of the pockets ensures the waffle holds its shape when topped with cherries, whipped cream or ice cream, a presentation common in Germany and Belgium.
Construction is uncoated cast iron throughout. The material retains heat and distributes it evenly, eliminating hot spots that would burn the batter. The 13 kg weight keeps the plates pressed firmly together, preventing batter from leaking and ensuring uniform thickness across the waffle.
The plate produces two waffles per cycle, each sized 165 x 105 x 30 mm. This format is designed for portion control and presentation: the waffle is large enough to be filling, yet compact enough to plate with garnishes without overhang.
Cleaning follows from the uncoated iron. After each service the plates are brushed free of crumbs, wiped with a lightly oiled cloth, and stored dry to prevent rust. No detergents or abrasives are used, as they would strip the seasoning that builds up over time and protects the iron.
Variants with different waffle dimensions are available on request.
