-18°C / -22°C ventilated pastry freezer. Delivery time ~ 2 weeks
A ventilated pastry freezer keeps delicate pastries, cakes and dessert bases at deep-freeze temperatures without drying or flavour transfer. A fan circulates cold air evenly across every shelf, so each tray chills at the same rate and no hot spots form. The air is drawn over an evaporator coil, cooled, then pushed back into the cabinet in a continuous loop. This forced convection shortens pull-down times and maintains a uniform temperature throughout the interior, even when the door is opened frequently during service.
To use the freezer, load the ten supplied grids with trays of unbaked or pre-baked items. Slide each pair of runners into the vertical guides on the side walls. Set the electronic thermostat to the desired temperature between -18 °C and -22 °C. The unit starts automatically; the digital display shows the current reading. When the target is reached, the compressor cycles on and off to hold the temperature. Condensation on the door frame is prevented by an electric heating element, while an automatic defrost cycle melts any ice on the evaporator at set intervals. Meltwater drains to a heated pan beneath the cabinet and evaporates, so no manual emptying is needed.
The cabinet is built from AISI 304 stainless steel, inside and out, with 60 mm of insulation. The door is reversible, self-closing on a spring hinge, and fitted with a lock. A tool-free gasket can be removed for cleaning without tools. The interior has rounded corners for hygiene and an LED light for visibility. The exterior back and bottom panels are galvanised steel, while the feet are height-adjustable stainless steel. An insulated engine compartment at the top keeps the refrigeration unit separate from the storage space, maximising usable volume.
A capacity of 737 litres provides space for large batches of frozen desserts, while the external footprint of 740 by 990 mm fits standard worktop depths. The 184 kg weight requires two people or a trolley to move the unit into position. The 591 W power rating draws a steady load on a 220-240 V single-phase circuit, typical of professional kitchens. The R290 refrigerant is a hydrocarbon with low environmental impact, and the automatic condensate evaporation removes the need for a drain connection.
Cleaning involves wiping the interior with a damp cloth and mild detergent, removing the gasket for thorough cleaning, and brushing the evaporator coil during scheduled maintenance. The ten pairs of slides lift out for separate washing. The unit is supplied ready for immediate use, with no additional accessories required beyond the included grids.
