A single worktop unit that heats and chills food at the same time, letting chefs move straight from searing to rapid cooling without transferring ingredients.
The Tepp-Twin station uses two independent electric plates mounted side by side. One plate is heated by an internal element, raising its surface temperature to cook or sear food on contact. The other plate is cooled by a refrigeration circuit, pulling heat out of food placed on it so that dishes chill quickly and evenly. Because both plates are built into the same unit, the chef can switch between hot and cold processes in seconds, reducing handling and preserving texture and nutrients.
To use the station, the operator first selects the desired temperature for each plate using the digital control panel. The cooking plate can be set up to its maximum, while the refrigeration plate is adjusted down to its minimum. Once the plates reach the set temperatures, food is placed directly on the surfaces. A plexiglass shelf above the plates keeps ingredients within reach. Any smoke or vapour from the cooking plate is drawn through Viledon and activated-carbon filters by an integrated extraction fan, so the air is cleaned before it returns to the kitchen. A removable tray beneath the cooking plate collects residues, and a neutral drawer below the refrigeration plate holds utensils or ingredients that need to stay cool but not frozen.
The entire unit is built on a stainless steel frame. The cooking and chilling plates are made of AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning. Four swivel castors allow the station to be moved across the kitchen floor without lifting. A single cabinet with two-thirds capacity provides enclosed storage, and a hinged lid protects the cooking plate when it is not in use.
The digital control panel offers pre-programmed ignition for quick start-up and independent temperature regulation for each plate. This means the chef can set the cooking plate to a high temperature for searing while keeping the refrigeration plate at a low temperature for chilling, all from the same panel.
A power rating of 6.83 kW indicates the load the station places on the electrical supply. It requires a 230 V single-phase circuit, the standard voltage for most professional kitchens in the UK. The unit's footprint of 1600 mm wide by 850 mm deep fits into a compact space on the worktop, while its height of 930 mm keeps the plates at a comfortable working level for standing chefs.
Cleaning is straightforward because of the stainless steel surfaces and removable components. The cooking residue tray can be taken out and washed separately. The extraction filters should be checked and replaced periodically to maintain airflow. The castors should be kept free of debris to ensure smooth movement.
The Tepp-Twin TPTW2000 is a single model with no variants. It is listed in the CASTA catalogue under combined cooking and refrigeration stations.
