A stainless steel knife for the MOD.12 meat mincer cuts whole pieces of meat into fine, even mince by forcing them against a perforated plate. The knife sits directly on the auger shaft, spinning at high speed. Its sharp edges slice the meat as it is pushed through the holes in the plate, producing a consistent texture without tearing or overheating the fibres. This method keeps the mince cool and retains its natural moisture, which is essential for high-volume service where quality must stay uniform throughout the day.
To use the knife, the operator first removes the end cap and locking ring from the mincer head. The old knife is lifted off the auger, and the new one is placed onto the shaft, ensuring the drive lugs align with the slots. The perforated plate is fitted next, followed by the locking ring and end cap. Once reassembled, the mincer is ready to run. The operator feeds meat into the hopper, starts the motor, and monitors the output for evenness and flow.
The knife is made of stainless steel, chosen for its resistance to corrosion and wear in wet, acidic environments. It has no additional coatings or treatments; the material itself holds an edge through repeated sharpening cycles.
This knife fits a range of professional mincers and graters from FAMA, SANTOS and ZANUSSI, including the FAMA TRITACARNE CARENATO Mod.12 series, SANTOS Nr12-Snr-482150 models, and ZANUSSI H70H, H70DS and HV82H kneaders.
Cleaning is straightforward: after each use, the knife is removed, washed in warm water with a mild detergent, rinsed and dried immediately to prevent water spots or corrosion. Regular inspection of the cutting edges ensures the mince remains consistent and the motor is not overloaded.
