Model SVC4-22D
SAUCE-VIDE bath
A circulator heats and circulates water at a set temperature, surrounding food sealed in vacuum bags with steady, low heat. The water never boils, so proteins and vegetables cook evenly without losing moisture or shrinking. Because the heat is constant and the bags are sealed, flavours and juices stay inside the food, ready to be served or reduced into sauces afterwards. The method keeps portions consistent, reduces waste and lets chefs prepare other dishes while the circulator works unattended.
The Sammic Circulator 4/22 provides two separate baths of 4 L and 22 L, each with its own programme. The operator fills the baths with water, sets the target temperature between 5 °C and 99 °C, and starts the pump. Once the water reaches the set point, vacuum-sealed bags are lowered in and left to cook. A core probe can be added for even tighter control over internal food temperature. When the cycle finishes, the bags are lifted out; the same water can be reused for the next batch or drained for cleaning.
The unit is built from thick stainless steel, giving a stable worktop footprint of 716 mm by 332 mm and a height of 290 mm. Two separate control panels let each bath run its own programme without affecting the other. The 1.9 kW element draws a 230 V single-phase supply, suitable for standard commercial circuits.
The 4 L bath is sized for small batches or delicate items that need close attention; the 22 L bath handles larger volumes or bulk preparation. The 5–99 °C range covers gentle warming, pasteurisation, low-temperature cooking and holding. The 716 mm width fits most worktops, while the 290 mm height clears standard splash guards and overhead shelves. The 230 V requirement matches the typical kitchen ring, avoiding the need for a dedicated circuit.
Cleaning follows the stainless steel surfaces and the two baths. After draining, the baths are wiped down to remove any food residue, then rinsed and dried. The pump and heating element are checked for scale and descaled if needed. The control panels are kept dry and wiped with a damp cloth.
The Circulator 4/22 is listed in the professional sous-vide section of the catalogue.
