A refrigerated sauce rack keeps sauces chilled without a compressor by using a eutectic plate that stores cold. The plate is pre-frozen in a freezer, then placed beneath the pots. As the plate slowly thaws, it draws heat from the sauces above, maintaining a low temperature without electricity at the point of service. This method avoids noise, vibration and the need for a power socket near the worktop.
The operator loads the four porcelain pots with prepared sauces, slides the eutectic plate into its slot beneath the pots, and positions the rack on the worktop or counter. The sauces stay chilled for the duration of service, ready to be ladled or poured as needed. Once the eutectic plate has warmed, it is returned to the freezer to re-freeze for the next use.
The rack is built from black epoxy-painted steel, providing a durable, corrosion-resistant frame. Four porcelain pots, each 125 mm in diameter and 145 mm deep, hold 1.25 L of sauce. The eutectic plate conforms to the GN 1/2 gastronorm standard, ensuring compatibility with other kitchen equipment that uses the same module size.
The overall footprint of 275 x 358 mm fits neatly on most worktops, while the 200 mm height allows easy access to the pots without reaching. The 7.2 kg weight makes the unit light enough to move between storage and service areas without strain.
Cleaning involves removing the porcelain pots and washing them separately. The steel frame and eutectic plate can be wiped down with a damp cloth. The eutectic plate should be re-frozen after each use to maintain its cooling capacity.
