Double bain-marie. Capacity 2 x GN1/1 - 150 mm depth
A chafing dish keeps prepared food at serving temperature without drying or overcooking. It circulates warm water around gastronorm containers, transferring heat gently through the stainless steel walls. The water bath evens out temperature and prevents hot spots, so sauces stay smooth and meats stay moist. Because the heat comes from water rather than direct flame or electric element, the food never burns or sticks, even when held for hours during service.
The operator fills the base with water, sets the adjustable thermostat between 0 °C and 90 °C, and switches the unit on. Once the water reaches the chosen temperature, two GN1/1-150 containers are lowered into the wells. The two drain taps at the front allow quick emptying of the water without lifting the unit, so cleaning or temperature changes take only minutes. The transparent lid, if used, keeps heat in and reduces evaporation while still letting staff see the food.
The entire unit is made of stainless steel, including the wells, frame and taps. Stainless steel resists corrosion from water and food acids, and withstands the frequent cleaning of a professional kitchen. The adjustable thermostat controls the 3 kW heating element, giving precise temperature management from chilled holding to hot service. The 230 V single-phase connection plugs into a standard kitchen circuit, drawing enough power to heat the water quickly without overloading the supply.
The 660 mm width accommodates two full-size GN1/1 containers side by side, while the 540 mm depth fits neatly on a worktop or counter. At 19 kg the unit is light enough for one person to move, yet stable enough to stay in place during service. The 220 mm height keeps the containers at a comfortable working level without taking excessive vertical space.
After service the operator drains the water through the taps, wipes down the stainless steel surfaces, and removes any food debris from the wells. The taps themselves are designed to be disassembled for thorough cleaning, preventing scale build-up that could block the flow. The thermostat and heating element require no routine maintenance beyond keeping the water level above the element to avoid dry firing.
The dish is supplied as a single unit with two drain taps and a 230 V plug. No additional accessories are included, but standard GN1/1 lids and containers fit the wells.
