A heated sauce rack keeps sauces at serving temperature without scorching or drying out. The base plate warms evenly, transferring heat to the pots above. This method prevents hot spots that can spoil texture or flavour, while the enclosed design minimises evaporation. The adjustable thermostat lets the operator set the exact warmth needed for each sauce, from a gentle hold for delicate reductions to a warmer setting for gravies that must stay fluid.
To use the rack, place the four porcelain pots into the GN 1/2 wells. Fill each pot with up to 1.25 L of sauce, then switch the unit on. Set the thermostat between 40 and 90 °C and wait for the plate to reach temperature. Once stable, the sauces stay ready for service; the operator checks the level and topping up as needed. When service ends, switch off the power and remove the pots for cleaning.
The frame is black epoxy-painted steel, chosen for resistance to kitchen moisture and splashes. The four pots are porcelain, a material that distributes heat gently and is easy to clean. The base plate matches the GN 1/2 gastronorm standard, so the pots slot in securely and can be swapped with other GN 1/2 containers if required.
The adjustable thermostat controls the heating element, allowing precise temperature selection within the 40 to 90 °C range. The 0.3 kW power rating means the unit draws a modest load, suitable for a standard 230 V circuit found in most professional kitchens. The compact footprint of 327 by 340 mm fits neatly on a worktop or shelf, while the 245 mm height keeps the pots within easy reach. At 7.2 kg, the rack is light enough to move between stations but stable enough to stay in place during service.
Cleaning is straightforward: remove the porcelain pots and wash them separately. Wipe the heated plate and steel frame with a damp cloth, avoiding abrasives that could damage the epoxy finish. Regular wiping prevents sauce spills from hardening and keeps the unit looking professional.
The Casselin heated sauce rack is supplied as a single model with four 1.25 L porcelain pots, matching the GN 1/2 standard for compatibility with other gastronorm equipment.
