A thermostat regulates the temperature of a heating element by switching it on and off at set points. In a professional hob or cooker, the element heats the cooking surface or oven cavity, and the thermostat cycles the power to hold the chosen temperature. Without this control, the appliance would either overheat or fail to reach the level needed for grilling, simmering or baking.
The operator selects a temperature on the appliance's control panel, which sends a signal to the thermostat. The thermostat then monitors the actual temperature via a sensor and compares it to the setting. When the temperature falls below the set point, the thermostat closes the circuit, allowing current to flow to the element. Once the temperature rises above the set point, the circuit opens again, cutting power until the next cycle. This continuous adjustment keeps the cooking environment stable, whether the appliance is a gas burner, an electric hotplate or an induction zone.
To replace or fit this thermostat, the appliance must be disconnected from the mains. The control knob is removed, and the old thermostat is unclipped or unscrewed from its mounting. The new thermostat is positioned in the same location, ensuring the sensor probe aligns with the original path. Wires are reconnected to the correct terminals, the mounting is secured, and the knob is refitted. The appliance is then reconnected to the power supply and tested at several temperature settings to confirm the thermostat cycles correctly.
The thermostat is designed for single-phase electrical supply, matching the standard domestic and commercial circuits found in British kitchens. Its temperature range of 52-260 °C covers the full spectrum of cooking methods, from gentle warming to high-heat searing.
This LF thermostat is a direct replacement for SMEG kitchen appliances, including gas, electric and induction models. Compatible ranges include CS19, A1, A2, A3, A4, A5, CS120, CS150, CS18, CS20 and SY4110 series.
