A thermostat regulates the temperature of a heating surface by cycling power to the element. In professional grills, fry tops and toasters, the element heats a metal plate or ceramic surface; the thermostat measures the temperature and switches the current on or off to hold the set point. Without this control, the surface would either overheat, burning food, or stay too cool, slowing service. The single-phase design matches the standard electrical supply in commercial kitchens, so the thermostat connects directly to the appliance's wiring without additional transformers or phases.
To use the thermostat, the operator first disconnects the appliance from the mains. The old thermostat is removed, and the new one is wired into the circuit following the appliance's wiring diagram. Once secured, the appliance is reconnected and switched on. The operator sets the desired temperature on the control knob; the thermostat then maintains that temperature by switching the heating element on and off as needed. The range of 50 to 300 °C covers everything from gentle warming to searing, so the same thermostat can be used for grilling panini, toasting bread or frying on a cast-iron or ceramic surface.
The thermostat is a single-phase unit, designed to fit the electrical configuration of the listed appliances. Its temperature range of 50–300 °C allows precise control across the full spectrum of professional cooking tasks, from low-temperature holding to high-heat searing. The range also determines which appliances it can regulate: those that require temperatures outside this span will not be compatible.
This thermostat replaces the original part in FAMA fry tops, including the FRY TOP MEDIA and PIASTRA VETROCERAMICA models, as well as the PIASTRA DOPPIA GHISA hot plate. It also fits FORNETTO Q18, Q4 and Q6 toasters, and a wide range of MILAN TOAST panini grills, both cast-iron and glass-ceramic, including models 16000, 16001, 16002, 1600X, 16030, 16031, 16050–16055 and 17060–17062. The catalogue lists it under spare parts for electric grills and fry tops.
