A refrigerated buffet bar designed for self-service display keeps cold starters, salads and desserts at a safe, appealing temperature without manual defrosting. The SBM40F from Roller-grill uses a conduction plate that chills the stainless steel surface above it. A pin pressed against the underside of the plate draws heat away from the food containers, while the evaporator tube stays sealed inside the unit, away from circulating air. This sealed system prevents ice build-up, so the refrigerator defrosts automatically every two hours, controlled by an electronic thermostat. The result is steady cooling between +2 °C and +10 °C, the range that preserves freshness without freezing delicate items.
To load the buffet, the operator slides up to four GN1/1 containers onto the chilled stainless steel plate. The unit accepts any gastronorm tray or container up to 150 mm deep. A glass top and central shelf allow a second tier of display, while a drop-down shelf on the open side gives customers easy access. LED lighting inside the cabinet highlights the food, and a mirror on the wall side reflects the display for a fuller presentation. The operator sets the desired temperature on the electronic thermostat, then leaves the refrigerator to maintain it automatically. Every two hours the defrost cycle runs briefly, melting any condensation without raising the temperature inside the cabinet.
The cabinet is built on a wooden frame finished in light oak, mahogany, wenge or limed white. Brushed stainless steel posterns and an aluminium profile on the foldable shelves give a professional look. A wooden underbody provides storage for plates, and four double castors—two with brakes—allow the unit to be moved and locked in place. The compressor, a Tecumseh model made in France, is accessible from the front for maintenance. The unit runs on a 230 V single-phase circuit, drawing 0.5 kW, and weighs 99 kg, which keeps it stable on the castors while still allowing repositioning.
The 1495 mm width, 855 mm depth and 1405 mm height fit a standard worktop footprint, leaving space for a pass-through or counter service. The four GN1/1 capacity allows a varied selection of cold dishes without crowding the display. The R290 refrigerant gas is chosen for its low environmental impact. Shelves are removable to fit standard 0.8 m doors when the unit is moved through narrow passages.
Cleaning is straightforward: the stainless steel plate and glass top wipe clean, and the removable shelves lift out for washing. The sealed evaporator tube means no ice to chip away, and the LED lighting does not generate heat, so dust does not bake onto the fixtures. The wooden surfaces are finished for easy wiping, and the castors roll smoothly for daily repositioning if needed.
