A hot and cold buffet unit keeps prepared dishes at safe serving temperatures without drying or over-cooking. The refrigerated side removes heat from the well using a static evaporator and a refrigerant gas; the cooled air settles around the food, holding it between 2 °C and 10 °C. The heated side circulates warm water in a bain marie well, controlled by a mechanical thermostat that keeps the water between 30 °C and 90 °C. Both wells are stainless steel and 18 cm deep, giving enough depth for standard gastronorm trays while keeping the food visible and accessible.

The operator loads the refrigerated well with chilled dishes and sets the digital thermostat to the desired temperature. The bain marie side is filled with hot water and the mechanical thermostat adjusted to the required heat level. Once the unit is powered on, the neon lamp illuminates the display area, and the two separate drain cocks allow quick emptying of each well without mixing hot and cold water. Two tip-up dish-holders at the front provide extra temporary storage for plates or utensils.

The ROCAM HEKO 6 mix has a laminated wood structure finished in a choice of twenty colours, with a fixed Plexiglass sneeze-guard across the top. The unit stands on two castors with brakes for stability during service. A stainless-steel grid inside the refrigerated well supports gastronorm trays above any collected condensation, and the entire unit is supplied with an industrial plug for a 230 V single-phase circuit.

The 6 GN1/1 capacity allows three full-size gastronorm trays on each side, or two on one side plus a half-size tray for smaller portions. The 2084 mm width fits a standard worktop run, while the 210 kg weight means the unit is moved on its castors rather than lifted. The 1.858 kW power rating indicates the load on the kitchen circuit when both heating and refrigeration are running.

Cleaning involves wiping the laminated wood surfaces with a damp cloth, emptying and sanitising the stainless-steel wells via the drain cocks, and removing the sneeze-guard for thorough washing. The neon lamp is replaced when it dims, and the refrigerant gas is handled only by certified technicians.

Optional accessories include upper chromed retaining bars, foldable dish-holders in laminated wood or stainless steel, full lower cupboard doors, removable display grids, and custom adhesive stickers. The unit can also be ordered with a UK plug or a 45° cut for specific configurations.
