A heated buffet unit keeps prepared dishes at serving temperature while presenting them to customers. The ROCAM HEKO 6 BM uses a bain marie system: heating elements beneath a stainless steel well warm water, which in turn transfers heat evenly to gastronorm containers placed above. This indirect method prevents hot spots and maintains consistent temperatures across all dishes, essential for buffet service where food must stay safe and appealing for hours.

The operator loads up to six GN1/1 containers into the well, fills the well with water to the recommended level, and sets the mechanical thermostat between +30 °C and +90 °C. A neon light above the display illuminates the dishes, while a fixed Plexiglas sneezeguard protects food from airborne particles without blocking the view. Front and rear laminated wood dish-holders keep plates and utensils within easy reach. A drain cock at the base of the well allows quick water changes during service.

The buffet's structure is built from laminated wood, chosen for its durability and resistance to kitchen moisture. Chromed details and a stainless steel well add corrosion resistance and ease of cleaning. Two castors with brakes allow the unit to be moved for setup and locked in place during service.

Controls are simple and mechanical: a single thermostat dial sets the temperature, with an indicator light showing when the elements are active. The unit operates on a 230 V single-phase supply, drawing 3.028 kW, which requires a dedicated circuit in a professional kitchen.

The 2084 mm width and 220 kg weight mean the buffet needs a stable floor and a clear run for delivery. Its 654 mm depth fits standard worktop layouts, while the 1348 mm height keeps dishes at eye level for customers. The 6 GN1/1 capacity matches the output of most professional kitchens for a single service period.

Cleaning involves draining the well, wiping the stainless steel interior, and sanitising the Plexiglas sneezeguard. The laminated wood surfaces can be cleaned with a damp cloth and mild detergent, avoiding abrasives that could damage the finish. The chromed bars and dish-holders detach for thorough cleaning.

The HEKO 6 BM is available in a range of colours, from neutral tones like Silver and White Sand to bolder options such as Saffron and Wenge. Optional accessories include chromed retaining bars, foldable dish-holders in wood or stainless steel, removable tray slides, and a lower cupboard with doors. A UK plug can be fitted at additional cost, and a 45° cut option allows seamless integration with other units.
