A heated buffet keeps prepared dishes at serving temperature without overcooking or drying them out. The ROCAM HEKO 4 BM uses a bain marie principle: heating elements beneath a stainless steel well warm water, which in turn transfers gentle, even heat to the gastronorm containers above. This indirect method prevents hot spots and maintains moisture, making it suitable for sauces, stews, vegetables and delicate proteins alike. A mechanical thermostat regulates the water temperature from just above freezing to near boiling, allowing the unit to hold chilled desserts at one service and hot mains at the next.
To use the buffet, the operator fills the stainless steel well with water to the marked level, then switches the unit on. The indicator light confirms power, and the thermostat dial is set to the desired temperature. Once the water reaches the set point, the light cycles off and the buffet is ready to receive loaded gastronorm pans. The fixed sneezeguard of clear Plexiglas keeps food visible while protecting it from airborne contaminants. Front and rear laminated wood dish-holders provide stable support for plates, cutlery or additional pans. When service ends, the drain cock empties the well for cleaning.
The buffet's structure is built from laminated wood, chosen for its durability and resistance to kitchen humidity. Chromed details add corrosion protection and a professional finish. The stainless steel well is 18 cm deep, deep enough to hold sufficient water for long service periods without frequent refilling. Two 125 mm castors with brakes allow the unit to be moved for cleaning or reconfiguration, then locked in place during service.
Controls are simple and mechanical: a single thermostat dial sets the water temperature, and an indicator light shows when the heating elements are active. The 2.27 kW power rating reflects the load on the electrical circuit; the unit is supplied with an industrial plug for a 230 V single-phase supply, the standard in British commercial kitchens.
The 1434 mm width, 654 mm depth and 1348 mm height give the buffet a compact footprint that fits against a wall or island counter. At 170 kg, the unit is heavy enough to remain stable during service but can still be rolled by one person when the castors are unlocked. The 4 GN1/1 capacity allows four full-size gastronorm pans to be held simultaneously, enough for a varied buffet of mains, sides and desserts.
Cleaning is straightforward: the stainless steel well is emptied via the drain cock, then wiped down with a non-abrasive cleaner. The laminated wood surfaces are wiped with a damp cloth and mild detergent, avoiding excessive water to prevent swelling. The Plexiglas sneezeguard can be removed for thorough cleaning if required.
The buffet is available in a wide range of colours, from neutral silver and white to bold saffron and lime, allowing it to match or contrast with kitchen décor. Optional accessories include chromed retaining bars, foldable dish-holders in wood or stainless steel, removable tray slides, a lower cupboard with doors, and a middle shelf for additional storage. Custom adhesive stickers and a UK plug are also available as optional extras.
The HEKO 4 BM is categorised as a heated buffet, designed for front-of-house display in restaurants, hotels, event catering and staff canteens.
