A heated buffet keeps prepared dishes at serving temperature without drying or overcooking. The ROCAM ATHENA 5BM HALO combines two independent heating systems: a bain marie below and halogen lamps above. The bain marie circulates warm water around the gastronorm wells, transferring heat gently and evenly to the base and sides of each pan. Halogen lamps above emit radiant heat that warms the surface of the food, keeping it glossy and appetising while the bain marie maintains core temperature. Both systems are controlled separately, allowing the operator to balance the two heat sources for dishes that need more surface warmth or deeper holding.
The buffet is loaded from the front. Five GN1/1 pans slide into the wells, which are 26 cm deep and fitted with a drain cock for easy cleaning. A fixed sneeze guard above the lamps protects the food while allowing clear visibility. The operator sets the desired temperature on the digital thermostat, which regulates the bain marie between 0 °C and +90 °C. The halogen lamps are switched on or off as needed, providing instant radiant heat when required.
The structure is built from laminated wood, chosen for its durability and resistance to kitchen moisture. The exterior finish is available in a wide range of colours, allowing the unit to match the kitchen or dining room decor. The base is fitted with two castors with brakes for stability during service, while the remaining castors allow the buffet to be moved when empty. The power cable is equipped with an industrial plug, suitable for the 230 V single-phase supply common in professional kitchens.
The 3.023 kW power rating indicates the load the buffet places on the electrical circuit. In a busy kitchen, this may require a dedicated line to avoid tripping other equipment. The overall dimensions of 1824 mm wide, 747 mm deep and 1515 mm high determine the space the buffet occupies on the floor, including the sneeze guard. The 172 kg weight reflects the robust construction and the need for two people to move the unit safely when fully assembled.
The wells are designed for standard gastronorm pans, but the buffet can be customised with a variety of accessories. Options include foldable dish holders in laminated wood or stainless steel, removable display grids, full lower closures with doors, and reinforced castors. Each accessory is chosen to adapt the buffet to specific service styles, from self-service to plated dishes.
Cleaning involves draining the wells after each service, wiping down the laminated surfaces with a damp cloth, and removing any food debris from the sneeze guard. The halogen lamps should be switched off and allowed to cool before cleaning. The digital thermostat and controls are kept dry to maintain accuracy.
The ATHENA 5BM HALO is part of the ROCAM professional catering range, positioned for medium to large operations that require flexible heated display and holding solutions.
