The unit circulates cooled air around enclosed compartments, drawing heat away from the stored items to hold them at the set range. This method prevents temperature fluctuations that can occur with open displays, ensuring ingredients or plated dishes remain fresh without drying out or warming unevenly.

The ROCAM ATHENA 3 PR/M W is designed for self-service areas where operators load chilled dishes into the refrigerated cavity. The digital thermostat allows precise setting of the desired temperature, while the internal LED lighting illuminates the contents for clear visibility. The mobile Plexiglas® sneeze guard can be lowered or raised as needed, protecting food from airborne contaminants while allowing easy access. Once loaded, the buffet maintains the temperature automatically, requiring only periodic checks to ensure the display remains fully stocked and the temperature holds steady.

Constructed with a laminated wood structure, the buffet features a rear mirror that enhances visual depth, making the display appear larger and more inviting. The compressor ventilation grids are integrated into the wood structure for a seamless look. The worktop is made from refrigerated HANEX® material, providing a durable and hygienic surface. Two polyamide castors with brakes allow the unit to be moved into position and secured in place.

The controls include a digital thermostat that sets the temperature between +2° and +8°, suitable for holding chilled dishes without freezing them. The power rating of 0.598 kW indicates the electrical load required for operation, while the 230 V voltage means it plugs into a standard single-phase circuit. The unit's weight of 151 kg reflects its sturdy construction, requiring careful handling during installation. The footprint of 1174 x 747 mm determines the space it occupies on a countertop or work surface, while the 3 GN1/1 capacity specifies the number of gastronorm pans it can hold.

Cleaning involves wiping down the laminated wood surfaces and HANEX® worktop with a damp cloth and mild detergent. The Plexiglas® sneeze guard can be removed for thorough cleaning, and the interior cavity should be sanitised regularly to maintain hygiene. The ventilation grids should be kept free of dust to ensure efficient airflow and cooling performance.

Customisation options include a range of laminated wood colours, such as silver, rose, saffron, lime, and others, allowing the buffet to match the aesthetic of any kitchen or display area. Additional accessories, such as foldable dish holders, tray slides, and intermediate floors, can be added to tailor the unit to specific operational needs. The unit is compatible with standard gastronorm pans, though these are not included.
