A salamander grill directs intense overhead heat onto food to finish dishes with a golden crust, melt cheese, or glaze surfaces without further cooking the interior. The Roller-grill SEM600B uses two Incoloy resistance modules mounted above the work area; these elements reach and hold high temperatures, concentrating radiant heat downward onto the food below. Because the heat source is above, the grill does not require a pan to reflect heat upward, so plates, trays and dishes of any size can be placed directly under the elements.
The operator positions the food on the removable grid or bottom plate, then lowers the movable top surface until it is just above the dish. A counterweight built into the refractory bricks and a patented ball-bearing system allow the height to be adjusted to the nearest millimetre without effort. Once the height is set, the four-position switch is turned to activate one or both of the heating zones, controlling the intensity of the heat. After a brief preheating period, the grill maintains a stable temperature, ready for continuous use throughout service.
The SEM600B is constructed with a stainless-steel exterior and a refractory lining that supports the Incoloy resistance modules. The grid and bottom plate are removable for cleaning, and the resistance elements can be wiped with a soft cloth once they are cool and the unit is switched off. The entire assembly is mounted on a sturdy frame that keeps the 49 kg weight stable on a worktop.
The 3 kW power rating draws a steady load on a 230 V single-phase circuit, suitable for most professional kitchen installations. The 600x640x590 mm footprint fits standard worktop depths, while the 495x375 mm internal cooking area accommodates full-size gastronorm trays and large plates. The dual heating zones allow separate control over each half of the grill, so one side can be used for delicate glazing while the other maintains high heat for grilling.
Cleaning involves removing the grid and bottom plate, wiping the resistance modules when cool, and washing the removable parts. The adjustable top surface and counterweight system require no maintenance beyond occasional inspection of the ball-bearing mechanism.
The SEM600B is a single model with no variants. It is categorised under professional salamander grills in the Roller-grill range.
